Just as with fine champagne, restrictions in geography and nutrient levels make it extraordinarily challenging to make a stellar organic matcha. Without fertilizer, tea plants often lack the nutrients (and particularly the nitrogen) they need to produce their best leaves. All too often, this results in a sub-par matcha. Handcrafted almost entirely from gyokuro leaves, this rare, organic matcha has a gorgeous chartreuse color with a profoundly sweet, fresh aroma and a light iodine note. It readily froths into a full, pale green, foamy head with a deep green body. The liquid aroma is rich and intensely fresh, without the bitter tones of lesser matchas.
